I did film more of this cake but the camera focus wasn't working and everything else turned out blurry. I used petals tips for all the flowers, my roses on the side of the cake were reverse roses (see my Morning Glory video). I also had a lot of trouble with my buttercream, my kitchen is very cold and that threw everything off.
The tier sizes for the anniversary cake were 5" on top, 6" on the bottom.
Recipes for the Thanksgiving cake:
Pumpkin cake
1 cup vegetable oil
3 eggs
1 (15 ounce) can pumpkin puree
1 teaspoon vanilla extract
2 1/2 cups white sugar
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt
Preheat oven to 350 degrees. Grease pan(s), I used 2 8" square pans for this one.
In a small bowl sift together dry ingredients. In a large bowl cream together all the wet ingredients. Gradually add the dry ingredients to the wet, mix until just combined.
Pour into pan(s) and bake for about 45-60 minutes, or until toothpick inserted into middle comes out clean. (recipe is from allrecipes.com, by D Adams)
I'll post the recipe I used for cream cheese frosting but be warned, it's tempermental and may not look the same as mine did.
1/2 c. salted butter, softened
1/2 c. shortening
2 8 oz. packages softened cream cheese
3 lbs powdered sugar (about 12 c.)
3 tsp. vanilla extract
2-5 tbs. half and half
Cream together butter, shortening and cream cheese. Slowly add the vanilla and 2 tbs of the half and half. Gradually add the sugar. You may or may not need anymore half and half, if you do, gradually add a tbs at a time until frosting reaches spreading consistency. This recipe needs to be refrigerated.
